Tomaotes
    #819614 - 08/16/02 07:59 AM (14 years, 8 months ago)

Since cullinary is now included in this forum, I thought I'd post a nice little thing I like to do with tomatoes.

Anyone with a garden not terrorized by a groundhog, like mine, is probably just about now harvesting loads of tomatoes.

Here's something you can try with a few.

Seed and slice the tomatoes. Trash the ends.

Lay the slices down in a fan pattern, exposing as much of each tomato as possible.

Sprinkle with extra-virgin olive oil.

Add salt, dry basil, breadcrumbs, and grated parmesan cheese to taste.

Top with another sprinkling of olive oil.

Serve with some nice Italian bread. After you eat the tomatoes, sop up the oil with the bread.

Good eats.

What do you guys do with your extra tomatoes?

In reply to:

Cut into chunks, mix with cooked pasta, olives (green stuffed with anchovy), capers, chunks of parmesan, tuna and olive oil. Nice piece of bread. Loads of sea salt!!
Similar ingredients to yours I love it

Good luck

That sounds pretty awesome.

Do you serve the pasta hot or cold?

And if cold, when do you add the raw ingredients?

Cold.
Just put the pasta in a big bowl, and throw in the ingredients and stir it up, Drizzle oil over last.
Also forgot, add basil leaves too

Quick, easy, cheap, filling and yummy

Good luck

I actualy got Tomatoes a month ago, they are still comming but the bulk has gone now...

I finaly made for the first time in my life a Motzerella, Tomato, Basil salad with crushed black pepper and olive oil.

I bought some really good olive oil with two balls of great motzerella and fresh basil and aranged everthing in the traditional way and ya know what?

It wasnt that good. The flavors barely meld and its just like eating seperate with oil and seasonings on it. Its nothing special..

I find that basil and tomato were born for each other.

I came up with a wicked recipe for bruschetta pizza.

Aquire some pizza dough, buy it, make it yourself, whatever. I use a breadmaker 'cause it's easy.

Chop up some tomatoes into cubes. mix them in a bowl with a bunch of fresh basil, some garlic, olive oil, parmesean cheese, oregano.

Roll out the dough, or do that crazy spinny chef move if you've got skills. Put some pizza sauce on it, then spread your tomato mix on, then put a bunch of mozzarella and paresean on top. Brush the edge of the crust with olive oil, and sprinkle more parmesean on it. Then cook at 400 for around 15 minutes, whenever it looks pretty much done. Turn on your broiler for a little bit to brown some of the cheese. Then get really stoned and chow down.

hmmmmmmm sorry, no great tomato recipes, but an easy soup to go along with yours, and a favorite at my place is my italian potato soup

in a decent size pot, dice about 2-3 pounds of potato's
cover in water and boil till ALMOST fork tender.
pour out about 1/2 the water ( save it for your agar)
replace with milk
4 or 5 cloves fresh crushed garlic, a dash of either oregano, or italian spice, what ever is handy, and white pepper and salt to taste, return to cook
while this is finishing the softening of the potato's brown and drain 1 pound of roll italian sausage.
add to the soup mix, continue cooking to thicken ( i usually mash a few of the taters to help)
about 10-15 minutes before its done, add a 1/2 pint of heavy cream.

bowl it up, and place some parmesion cheese on top, scallions, and serve with crusty garlic toast
