Why do we "dunk" rather than "water" our mushies?

This seems like a question someone must have asked before but somehow I missed it in my searches but...
Why do bulk growers insist on dunking their casings in between flushes rather than simply adding water slowly until the substrate stops absorbing and they start getting excess? Would seem like a much easier way to put moisture back into the sub since there wouldn't be the hassle of draining.
Dunno, maybe I'm still too new at this and there's a very obvious explanation.

i'm a n00b too, but full immersion might be necessary since bulk substrates colonized with myc are different from regular garden soil. it may be that the water in a bulk substrate doesn't flow through it or get distributed correctly by simple watering.

From my own experience, I know that colonized substrate takes a little while to absorb moisture but I would think just adding a cup or so (depending on size of substrate) and letting it soak in would be an effective alternative to dunking.
I suppose a running-water dunk would be better since it would remove contams while adding water and letting it soak in would be feeding contams in a sense.
The main reason I don't like dunking is because sometimes a chunk of my sub breaks off... not usually but sometimes... and because it actually requires work and some attention(OH NO!)

You can do it either way. However, since it isn't the 'soil' or 'substrate' we're hydrating, but rather the individual cells of mycelium, soaking overnight has become the preferred method. Cells take on water by osmosis, therefore the water pressure helps to hydrate them faster than simply misting. RR

yeah, i know the feeling. i really like monstermitch's dunk (scroll down a bit). He uses a monotub and just lets his bathtub faucet run into it for 4 hours. Then he drains the bulk substrate for 4 hours. If you're having problems with pieces breaking off, why not try using a support under the sub to keep it all together? something like a garbage bag or pillow case might make a suitable cradle.

To help explain by example. Throw one of your mushrooms in water and let soak for one hour. Watch what happens. IT GETS BIGGER!

I'm sorry let me reword that. Mist a mushroom and dunk one separately. The dunked one gets bigger.
