Why does agar work for so many species?

Don't some strains require pretty specific conditions to even germinate? How does agar work for all of them?

Certain agar recipes work better for certain mushroom species is what I got from that.
I'm still curious if there are species extremely selective at which types of agar they will grow on and won't germinate on others. Do most mushrooms easily grow on any nearly any types of agar recipes like the cubensis and mexicana strains are doing in mobyd's experiments? All the strains tested in Mobyd's experiments germinated but they were all apart of the Psilocybe genus, what about the others?

In GGMM by Paul Stamets for each species he list growth parameters there is a list of "suggested agar culture media"

I've found that Pluteus species do not germinate on agar media that work with most species. In my experience, all bluing Psilocybes, Gymnopilus and Panaeolus as well as Pleurotus will germination on the standard fungi agars MEA and PDA.
Also there is a big difference between spore germination and mycelium growth on agar. Some species can be maintained as mycelium on agar from clones but resist growing directly from spores on agar.
