normal.. not to hot or not to cold..
there just not doing anything there not getting bigger and i don't see any more sprouts growing

Make sure you have adequate fresh air exchange. Do you have any ventilation system? If not, make some holes in the tub and plug them with micropore tape or polyfill. Dunking really helps improve yields, but it'll probably stall any mushrooms growing at the time. Besides, if you say they look moist and not dry, dunking won't solve the problem.

you dont need to put them in a fridge to dunk, you want to hydrate the cakes, you don't need to cold shock them

I had always heard that you should either put the container in the fridge or make sure dunking water was running to avoid contamination. Can anyone confirm?

putting it in the fridge is certainly not going to prevent contams
running water? for 24 hours? that is a horrible idea. if you care at all about the environment you would not even think about doing that. plus that will do nothing to prevent contams, the turbulence in the air caused by the running water will only increase the amount of contaminations that enter the water
if your cakes are 100% colonized you shouldnt need to worry about contams during the dunking process
get a tupperware container and place your cakes in there, then fill with water, then place the lid on and secure tightly, in 24 hours remove cakes, thats all you need to do.

actually the fridge is used to prevent contaminants as we well know the reason we refrigerate leftovers is so that they do not contaminate with bacterias and decompose. The fridge slows this process and if you incubated then the cold shocking isn't much of an issue as is my understanding, since a temp change of 10 degrees is more than sufficient. However if you did not incubate it may become an integral part of the dunking process. Really though the main benefit is the fact that whatever contams the cakes could be exposed to will not be aloud to grow significantly during the dunk.
Many people debate the effectiveness of cold shocks and I think this mostly has to do with the above mentioned issue and tropical species as well, but I've never heard any rebuttal to the contaminant comment. This will be of particular concern during later flushes, when contamination risks increase, so take note.
Shroober's Tupperware container idea is the best way I've noticed to do dunks by far because you can remove all air and put them in the fridge without any real risk of any of your fridges gross contams getting in your container.

I have another question... I used jars and there growing in like every direction, even down.. what method is used where they just grow straight up and without using jars? here is an example, its from shroober's fruiting chamber pic's.

that is a tub setup and I think that one is a monotub (just a tub setup with polyfill for air exchange) however the key to getting a tub to grow just up is to cover the sides and make light only come in from the top.
