Would you eat swill and stuff that was good for you?

Ever since I've completely changed my diet, I've been satisfied with eating crazier and crazier foods as long as they are nutritious. And once I removed the societal barriers to what I was eating, they actually taste quite good.
I'm talking things like tongue, livers, brains, bones, marrow, lard, and headcheese. So far that's all I've had the pleasure to try. And I've like it all, plain. It's all extremely good for you too.
So after thinking, and eating, and thinking, I thought that we could solve a lot of our starvation problems by harvesting all this waste. Why not sell beef tongue in the supermarkets again? Pressed innard materials? Tins of blood and bonemeal? Tubs of brains?
People would be able to eat nutritiously for cheap. Because all we do now is throw that shit away for no reason. All those nutrients to waste, for what? Because someone said it's gross to eat pancreas and kidney? Why? Who said that?
Instead we are forced to buy the more expensive cuts. Or buy cheetos.
I think it would be a fantastic idea to sell all of this stuff, but wonder how long it would take people to catch on. Get off their domesticated high horses.

By the way, saturated fat and cholesterol is good for you. Those studies that link them to heart disease are BULLSHIT. Look it up. btw these are all 8 oz portions in case you didn't notice:

I've wanted to drink the blood from a freshly slaughtered lamb for awhile now. Not out of violence, or anger. But because blood is quite nutritious.

That's awesome for bodybuilding btw.
I saw excellent gains whenever I made "cholesterol omelettes". Which were 4 whole eggs and a handful of chicken livers.

Heart disease comes from ware and tear on the heart. Especially from uneven and spiked levels of insulin. Nothing to do with saturated fats or cholesterol. As for sources? I don't normally save them. But here are a few:
read "Good Calories, Bad Calories" by Gary Taubes.
http://www.ourcivilisation.com/fat/
This forum has a lot of info if you look around. Lots of idiots, but then again lots of info:
http://forum.bodybuilding.com/forumdisplay.php?f=61
There are lots of studies online, but to be honest I don't feel responsible to dredge them up. Not to be a dick or anything, but I would just be dicking around on google for the next few hours to prove a point I already beleive. And it's 30 minutes past my bedtime!

How does ANY of that support your assertion that eating organ meats is beneficial to health? None of the diets in the comparisons you linked advocate eating pancreas. What about the incredibly high calorie content of these foods? Most Americans are obese, and do not need MORE calories in their diets.

I can already buy beef tongue in my grocery store. And tripe, and other unidentified parts just labeled as "beef parts". But I also live in a predominantly Mexican neighborhood with lots of immigrants who are used to eating such things.
I tend to go for the loins myself.

The point is what those products contain, not what they are. They are fats, proteins, and micronutrients. All asserted as beneficial by these studies. Beef tongue is the same as beef roast, just fattier. They even taste pretty similar! The tongue is just a bit more soft.
Calories, btw, aren't America's problem. It's excesses of sugar and whatnot causing insulin havoc and destroying their metabolisms. These foods are highly satiating anyhow. Have you ever tried eating a whole can of spam? I did. And by the time I was done, I wish I hadn't I was so full. Just that little fist of meat filled me up like a ton of bricks.
I don't think we'll see people binging on beef tongue anytime soon.
