Homemade Hot Sauce

I cleaned some of my cayennes, then sauted some onion & garlic, tossed it all in some hot vinegar, let it set & cool, then pureed in a blender....






If you would like to trade for seeds let me know, this shit turned out really good.

Sounds good. I like my hot sauce like I like my whiskey, aged slightly and unadulterated. Im a hot sauce purist, just give me peppers and vinegar. But I can see some garlic and onion adding nicely to the mix.

Yea thats the way to go. People on this forum however, would never understand the desire for true raw hot sauce

if I wanted pepper sauce Id grind up peppers and put that on food. What I want my man, is hot sauce.

I can personally say that A3eyedfish makes the best hot sauce i have ever tried before.. and not just one kind.. Every type of hot sauce he makes tastes absolutely amazing.

so 3eyed, my cayennes are nearing maturity and i was going to try to make a batch of hotsauce, i was curious, do you age yours? if so how would i go about this?

Best way to stop is to mix 5 parts water to 1 part bleach..This will turn the hot stuff into a salt.That can be washed off...

i just bottle it, it ages some as time goes by, prolly best to make sure the peppers are ripe before makeing the sauce. I clean the ones that are ripe & save them in the frig & as more ripen i clean more till i have enough to make a batch.

But not to fear kids, 3eye has it going on, there is a new batch to keep up with the demand, and this one is even hotter yet, same plants, just another time of year, i guess when it reaches the upper 90's the peppers get hotter............

i dont have any pictures, but i made what i believe to be some awesome hotsauce the other day. aplle cider vinegar, shallot, garlic, 10 cayenne, 5 orange habaneros, 5 thai sun and about 2 tablespoons honey. pureed very well. i tasted it as i was bottling it, and it was superbly hot with a hint of sweet. im going to wait about 2 weeks before opening it.

next time, try papaya rather than honey, i made a batch with habaneros, last fall, it really has a nice flavor, this is why i am growing papayas now.

If you want pure pepper flavor..

Take dried peppers, either one kind or a mixture, alone or with other dried herbs in. Like, garlic & onion powder.

Then, grind this into a fine herbal powder.

Once you got that, add two parts by weight of olive oil to every 1 part of weight of herbal powder. Stir/blend well. It is peanut butter consistency you are after.

Then, let this stand for a week.

The resulting goop is a dynamite hotsauce. If you can picture its heat when using cayenne, imagine an all-habanero or even Bhut putty.

You use this as a cooking ingredient, to add heat and flavor to a meal while cooking.

The olive oil not only blends and strengthens the flavors, it also acts like a natural preservative.

If its a hot cooking oil you're after - same basic recepy but then with 10 parts by weight olive oil to 1 part by weight of pepper mix, then after a week at room temperature in the dark, filtering out the solids to yield a bright red fiery cooking oil.

The health dept. actually warns against putting stuff in oil for extended periods of time, they say it developes batchulism ( sp? ).

I don't have any need to use dried ingredients, i am kinda fussy about stuff i make haveing been in culinary for many years, plus i have a butt load of fresh peppers available most of the time.

I recently obtained a used oak whisky barrel in my travels; Im toying with the idea of aging a sauce in the barrel for a few years, but I fear spoilage. I dont know much about aging hot sauce :shrug:
