I got me a cast iorn skillet

I'm looking for some recipes that I can do with it. So far I have cooked a steak in it and it comes out really good.
Basically, I buy what is called a "new york steak" at Fry's grocery because they are pretty cheap and not too fatty. They are thick mother fuckers too. Basically, pre-heat the oven to like 500 with the skillet in it, coat the outside of the steak with a sprinkling of sea salt, turn one of the stove burners on like medium high heat, get the pan out of the oven, stick it on the stove, let it get hotter for a minute and coat the steak with an oil that has a high smoke point like peanut or canola.
Then, lay that steak down in the skillet for 30 seconds without touching it, flip it and let it go another 30 seconds. This will put a nice crust on the outside. Now shove the skillet, steak and all back into that 500 degree oven for 2 minutes, take it out, flip the steak, shove it back in for another two minutes, take it out and plate it.
Comes out a really nice medium rare with a pretty thick piece of meat and is really about perfect.
Now, please give me some recipes. I understand this skillet to be a highly versatile piece of cookery and I need some ideas.
I'm looking for meals here, not side dishes or desserts, but anything you feel like sharing will be appreciated.

fix the outside with drained horseradish and peppercorns, and maybe some dried out blue cheese, to make an interesting crust. Deglaze with some red wine. :O cast iron skillets rule

You can cook pretty much anything you want in them just depends on the size of the skillet Did you season it?
I have two cast iron skillets one of which belonged to my great grandma and is fairly small and then I have the hoss that is 13 1/2" dia and 2 1/2" deep I use them for everything

Cast iron is fabulous for deep frying as well. It holds the heat very evenly.
As Funguyfan asked, have you seasoned the pan yet?

Interesting site, advocates washing the pan with soap and water. I was under the impression that this is unnecessary.

Don't wash it. I use mine for dry frying spices Johnny cakes Try Lamb and good tuna done that way or use it over very hot gas burner.

cast iron ANYTHING is great to have.
I have a cast iron wok and it's frickin awsome for any kind of deep-frying, stir-frying.
If you haven't fried home-made fried chicken yet, you're missing out.

Cast Iron Pizza.
Wana know a secret about dough? You can cut the crust off of good bread and smoosh it down into a well seasoned skillet. Bake it for 5 minutes and then spread fillings and sauce, top with cheese and make a great deep dish pizza.


Making your own dough is best though.

cornbread, eggs, zucchini, stir fry, all sorts of steaks/meats, pancakes, pizza (soon to try!)
and all sorts of other things. the only thing i've found near impossible is scrambled eggs.
i've 4 iron skillets, and use them daily

This is how i break in my new cast iron skillets.. Best french fries ever!


The secret is to cut the fries, let them soak in cold water to get some of the starch out, then fry at 250 for 5 min or so, take them off and let them sit for like 10 min, then cook them until golden brown at 350. Then take them off and grind sea salt over them and sprinkle vinegar over them if you want and toss them around.

Anyone ever hear of using a cutting torch to burn all the oxidized metal off of old cast iron? I've seen my dad do this for my mom a long time ago. turns an old on into a new one...those things are damn near indestructible and will last a few lifetimes. Just a little tip for your old crusty cast iron.

Thats pretty cool, although they don't show much about how it works.... The cutting torch is pretty cool all the rust will burn and fly off as ambers leaving clean metal but this electrolysis is just something you'd want to play with for the fun of it. looks pretty nifty.

if i had pork chops... good thick ones, i would fry them. take some bisquick and mix in some freshly gournd peppercorns, rosemary, seasoned salt, oregano and thyme. mix it all up. get a good olive oil hot under medium heat. bread and fry the pork chops until they are as cooked as you like.in the remaining oil after the chops fry, you can fry up some potatoes in no time and not even have to worry about seasoning them.

ps^2: the way we season skillets in the south is to get some animal fat (make bacon) and let it coat the inside. then put it upside down in an oven at 500F for an hour or 2. be sure to have a cookie sheet with sides under it to catch the dripping fat. when it is done, you have a perfectly seasoned skillet.
