This is a delicious shellfish soup. Traditionally you would use a kind of white wine but I substituted it with a sam adam's white ale. It's a surprisingly simple dish that is amazingly delicious. First get a cast iron skillet or crockpot or something to cook it all in. Start to sweat some shallots and garlic, in olive oil and a bit of butter. Once those are nice and tender, add some panceta, basil leafs/thyme leafs/rosemary twigs. Cook that down a big, then add some sweet orange pepper's to the mix, add a touch of orange zest, salt, chives, scallions and oregonal. Cook till the pepper's are nicely done, then add a can of stewed tomato's with the juice. Then splash about 3/4 bottle of beer in there, the White Ale is particularly sweet and heady so it should work well in here.



Then in another pot add some water, about 2 inches or enough to cover about half way all the shellfish it is you are gonna be cookin. Then as the water begins to heat, add a splash of olive oil, sea salt, course peppercorns, rosemary/bay/thyme into the mix. Then add your shell fish washing them before hand of course, then cover and cook for roughly 4-5 minutes, wont take long. Once they are all opened up, add them including that delicious juice to the soup. Along with that I'll also add about 3quarts of hot water, aswell as a bit of tomato sauce and splash of red wine vinegar. I added a splash of parmesan cheese to it as well as a whole bag full of spinach, it may seem like alot but it cooks down nicely. I shucked about half the mussels, just to add room for some ditalini pasta, or lil ring pasta's. Add a grip of fresh cut scallions and chives to the mix, aswell as some roughly minced fresh italian parsley.




Then I'll cover that up, let sit for about 10-30 minutes, no rush. Let it reduce nicely, and then serve with a dash of chives ontop and some fresh pepper. Enjoy~

the best part of a clam, is that lil juicey lil mussel that keeps the two shells together. Its so tender and voluptuous
