General Tao's Tofu
1 box of firm tofu egg substitute for 1 egg 3/4 cup cornstarch vegetable oil for frying 3 chopped green onions 1 Tablespoon minced ginger 1 Tablespoon minced garlic 2/3 cup vegetable stock 2 Tablespoons soy sauce 4 Tablespoons sugar red pepper to taste 1 Tablespoon sherry (optional) 1 Tablespoon white vinegar steamed broccoli
Directions:
Drain, dry and cut tofu into 1 inch chunks. You can freeze tofu the night before to get a more chicken-like consistency, but it isn't necessary. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer/water mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.
Heat oil in pan and fry tofu pieces until golden. Drain oil.
Heat 3 Tablespoons vegetable oil in pan on medium heat. Add green onions, ginger and garlic, cook for about 2 minutes. Be careful not to burn garlic. Add vegetable stock, soy sauce, sugar, red pepper and vinegar. Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.
Serves: 4
Preparation time: 30 Minutes

Soysage, Bean & Barley Soup
1 pkg. (10 oz.) frozen BOCA Meatless Smoked Sausage or Morning Star Farms Patties 1 qt. (4 cups) water 1 can (15-1/2 oz.) great Northern beans, drained, rinsed 1 can (14-1/2 oz.) stewed tomatoes 1 medium onion, chopped 2 stalks celery, sliced (about 1/2 cup) 2 medium carrots, sliced (about 1/2 cup) 1/2 cup quick-cooking barley 2 tsp. Worcestershire sauce 1/2 tsp. dried basil leaves hot pepper sauce (optional)
CUT sausage into 1/4-inch-thick slices.
PLACE sausage and all remaining ingredients except hot pepper sauce in Dutch oven or large saucepan. Bring to boil; cover.
REDUCE heat to medium-low; simmer 15 minutes or until vegetables are tender. Season to taste with hot pepper sauce.
I found this recipe on www.kraftfoods.com a few years ago and it has remained one of my fav's

I have vegetarian cookbooks so I don't know if I can just post up copyrighted material...but there is one awesome recipes I got off of allrecipes.com
I can't seem to find it anymore, but I usually just toss shake & guestimate anyway.
hamburger bun(s) A portabella mushroom cap (or many) A couple tablespoons olive oil a tablespoon balsamic vinegar some dried thyme salt & pepper to taste minced garlic to taste
Mixed all the above together then brush onto the cap(s) and grill or broil. If grilling I highly recommend toasting the bun a bit. Slap some mayo on the bun with a tablespoon or so of capers, add the grilled cap then a tomato some lettuce and the other side of the bun!
The marinade makes them soooo juicy. These are seriously one of the best foods I've ever eaten...they are so amazing, I almost get into a meditative state eating them like I do when I drink green tea....fuckin tasty!

Braised Broccoli
4 cups broccoli florets 1 cup broccoli stalks, peeled, sliced (florets and stalks from 2 bunches) 1 large onion, diced 4 garlic cloves, minced 1 tablespoon Tamari soy sauce 1 tablespoon sweet sherry, (or mirin) 3/4 teaspoon olive oil
To prepare the broccoli: a) cut off the florets, b) peel the stalks, and c) dice the stalks. Heat large skillet on medium to medium-high heat and add oil. Saute onion for a few minutes, then add the diced broccoli stalks (the most tender part of the broccoli plant). Cook until the onion starts to brown (about 8 minutes). Add the broccoli florets and cook a few more minutes. Lastly, add garlic, and cook another few minutes. Add the tamari and sherry at end, and cook one minute. VARIATIONS: - Add some sliced carrots after the onion. - "Braised Brussels Sprouts" - Use halved Brussels sprouts in place of the broccoli. Serve sprinkled with bread crumbs.
Hearty Greens and Chickpea Saute
Preparation Time: 25 minutes Makes 8 servings.
1/2 teaspoon olive oil 2 large onions, chopped 3 medium carrots, sliced 3 pounds mixed hearty greens, chopped (e.g., collards, kale, and/or chard) (about 48 leaves) 3/4 cup chickpeas, cooked, drained 1/4 cup red wine 1/4 teaspoon sea salt 2 tablespoons sucanat 1/2 teaspoon sea salt
Heat a skillet over medium-high heat and add oil. Saute onions, carrots, and mixed hearty greens sealing them one at a time (about 14 minutes total). While vegetable are sautding, combine chickpeas, wine, salt, and sugar in a small pan and cook together. The idea is to impact a sweetened red wine flavor into the chickpeas (with no liquid left). When vegetables are done sauteing, add the remaining sea salt and chickpeas and cook for about 2+ minutes. VARIATIONS: - Instead of using chickpeas, try another bean such as white beans.
Roasted Mexican-Style Vegetables
Preparation Time: 40 minutes Makes 8 servings.
Depending on the chilies used, and on the amount of cayenne used, this dish can be very spicy.
1 large onion, thinly sliced 3 large red bell peppers, cut into 2" pieces 2 large carrots, cut into 2" pieces 1/2 medium red cabbage, cut into 2" pieces 2 medium Anaheim chili peppers, cut into 2" pieces 1 cup kidney beans, cooked 1 1/2 teaspoons unrefined corn oil 2 teaspoons cumin powder 2 tablespoons dried oregano 1/8 teaspoon cayenne, to taste 1 teaspoon sea salt 2 tablespoons red wine, optional
Toss cut vegetables, kidney beans, oil, herbs, spices, salt, and wine if desired in a bowl. Transfer to baking sheet (it should not need to be oiled since the vegetables are oiled) and roast in a 450 degree F (230 degree C) oven (no need to preheat oven) for about 50 minutes, or until the vegetables are not hard, and have browned. During the last 30 minutes of roasting, toss vegetables every 10 minutes to ensure they do not burn on any one side. VARIATIONS: - Add pitted olives.

Stuffed Mushrooms
2 pounds mushrooms, whole (about 60 large mushrooms) FILLING 1 tablespoon olive oil 1 large onion, chopped fine 4 celery stalks, chopped fine 1/2 teaspoon ground sage 1 teaspoon ground thyme 12 1/3 ounces tofu, low-fat silken, blended 1 teaspoon sea salt 1 1/2 tablespoons olive oil 1/2 teaspoon sea salt
Wash and stem mushrooms. For filling, heat a pot over medium-high heat and add oil. Saute onion, mushroom stems, celery, sage, and thyme in oil, sealing each one at a time (about 20 minutes total). Remove from heat, and fold in tofu and sea salt. In large bowl, toss mushroom caps with oil and sea salt. Press spoonfuls of vegetable-tofu filling into each mushroom cap (do not overfill since mushrooms shrink when they are cooked), and place on a baking sheet (it should not need to be oiled since the mushroom caps are oiled). Bake in a 400 degree F (200 degree C) oven (no need to preheat the oven) for 30-40 minutes until browned. 1 Serving Size = 2 mushrooms as an appetizer.

GARNISH 3 tablespoons cilantro, chopped fine 3/4 cup green onions, chopped fine (about 6 stalks)
Heat a large pot over medium-high heat and add oil. Saute onion, carrots, celery, red bell pepper, and garlic, sealing them one at a time (sealing is important for developing a good flavor) (about 30 minutes total). Add the cumin powder, oregano, cayenne, fennel seeds, and basil and cook 2 more minutes. Add the beans, corn, tomatoes, seitan (including the liquid from the package), water, and salt and simmer for 10+ minutes.

hey, thanks a lot. I almost forgot about this post, i'll have to try some of these out. All the ones i can think of seem so basic but with the meat removed from the recipe. If i think of one i'll let you know.
here's something simple:
corn chips, 1/2 an onion, 3 or 4 tomatoes, 1/2 a green bell pepper, 1/2 a red bell pepper, 2 avacadoes, half a brick of pepper jack cheese, half a brick of sharp cheddar cheese:
cut the onions, bell peppers onions and cheese and spread evenly on corn chips on a tray or pan, preheat oven to 350, put in nachos until well melted. Put on avacado and tomatoes when cooled.
see, all the recipes i can think of would just involve curry, or pasta, or lasagna, or parmagiana, or a barbecue marinade or something, but without the meat.
here's a good barbecue marinade:
1 pound of tofu, 1 green bell pepper, 1 red bell pepper, 1 onion, 1 squash, 1 zuchinni, 4 cloves of garlic, 3 or 4 bottles of ketchup, 3 or 4 bottles of hickory barbecue sauce, 3 or 4 bottles of kikkoman terryaki sauce cut vegetables and tofu, and mix together sauces and chopped garlic together in large pan, let marinade for 2 days. Barbecue on low or medium heat.
that one's pretty good, you really got to marinade the tofu or it doesn't completely soak up the sauces, it helps to poke holes in the tofu as well.
here's a favorite of mine for no bake cookies:
box of oatmeal 1 tablespoon and 1 teaspoon vanilla 1 cup of cocoa powder 2 cups of sugar 1/3 cup maple syrup 1 tablespoon cinammon 2 sticks of butter a few tablespoons of peanut butter 4/5ths cup of milk(hard to measure) mix butter, cocoa powder, cinnamon, milk, maple syrup and sugar on high, let boil for 1 and a half minutes. mix in vanilla. turn heat off and take off burner, mix in as much oatmeal as you'd like until it thickens. Remember, it will be a little thicker when it cools, but to me you can't really mix in too much oatmeal unless you can't stir it any more. mix in peanut butter and cinnamon. Spoon out onto tray, and wait until it cools.
also, a recipe i like, is the oatmeal cookie recipe found under the lid of oatmeal that you buy. I add the raisens, but i also add a cup of chocolate chips, 1/3 a cup of maple syrup, and a bunch of peanut butter. I also try and add some water to let it stir and mix better. When doing this i end up having to cook it for an hour instead of the 20 minutes it says on the box.
when i think of some more, i'll try and post them. THANKS FOR THE REPLIES!

breakfast, a la vegan!
TOFU SCRAMBLE: 1 slab of tofu 1 medium sized red onion 1 bell pepper (green, cause i think it looks nice) 2 grated garlic cloves a bit of broccoli a BUNCH of mushrooms cut thick grated carrot
also, turmeric, cumin powder, chili powder and flakes, thyme, rosemary, and salt.
in a big wok or pan, i oil it up and heat on medium. i add cut up onions and mushrooms. i get them all dank like and probably pick some mushrooms out to eat while dancing and drinking mimosa. i grate garlic over this and add the broc and bell pepper (cut, of course). after a few minutes, i add 1/2 teaspoon turmeric, 2 teaspoon cumin powder, then chili, thyme, and rosemary to taste, and a dash of salt. i turn the heat low and crumble the drained tofu over the wok. CRUUUUUUMMMMBLLLLLEEEEE! i grate carrot over this and mix. today, while i was doing this, i had another heated pan out, oiled, and i cut slices of cheap white bread in half and fried them to a golden brown deliciousness. and in a pot, i heated up some baked beans.

i've been wanting to start cooking big batches of stuff that can be reheated for quick meals, and this seems as good a place to start as any. but wtf does it mean to "seal" the vegetables, and how do you do it one at a time?

Super Hearty Spicy Vegetarian Chili
2 tablespoons olive oil 2 medium onions, chopped 2 bay leaves 1 tablespoon sea salt 2 stalks celery, chopped 2 red bell peppers, chopped 1 eggplant, sliced and diced 2 teaspoons cayenne pepper 3-5 jalapeno peppers, chopped 4-6 cloves garlic, finely chopped 2 carrots, chopped 1 zucchini, chopped 2 (4 ounce) cans chopped green chile peppers, drained 2 (12 ounce) packages boca burger 3 (28 ounce) cans whole peeled tomatoes, crushed 1/4 cup chili powder 1 tablespoon ground black pepper 1 (15 ounce) can kidney beans, 1/2 cup dried lentils..pre-simmered for 45 minutes until tender 1 teaspoon ground cumin 2 tablespoons oregano 1/4 tsp. cinnamon 1 tablespoon chili powder
Saute the onions in olive oil, add garlic, chile peppers, jalapenos, red peppers, and carrots. Saute for about 5 minutes.. then add the crushed tomatoes, and all your spices, stir and let that slowly cook for about 25 minutes. A little bit of water may be needed if it's too thick. then add your zucchini, celery, and eggplant and your (pre-soaked) beans.. throw in the boca burgers stuff mix that shit up and let it cook slow for about another 30 minutes, you are good to fucking go. Experiment.. add shit you like. Adjust amounts based on preference. Corn is good in here too. Feeds a couple people for 3 or 4 days.

lentil soup
(optional: 1 quart of chicken stock...i make my own, not store bought)
1/2 cup green lentils 1/2 cup of gray/tan/brown lentils 4 carrots, chopped into rounds 4 parsnips, cores removed, cut into chunks 1 medium or large onion, cut into chunks/strips can of diced tomatoes (preferably no-salt added; can substitute fresh if available)
soak lentils for 6-12 hours, drain, rinse, drain, rinse. add 2 cups water to pot (if using stock, if not using stock, add 5 cups water) with all ingredients except tomatoes. bring to a boil, and skim as best as possible (not necessary if rinsed well). let simmer for 30 minutes. separate liquid into a bowl. either mash or blend the ingredients to a fine consistency. slowly add liquid back to the pot, stirring and mashing or blending as you add. you will put about 3-4 cups of the liquid back into the pot. add tomatoes and place back on heat. bring to a low boil, then immediately simmer for 30 minutes.
at this point or later, you can add spices. i love lots of pepper and ground cayenne in mine, along with a hearty dash or two of cinnamon and basil. salt to taste, and add garlic cloves (pressed) or bragg's liquid aminos if desired

not only is it 100% vegetarian it's also 100% vegan and hypoallergenic (depending on where you live)

this is the best peanut sauce i've made to date:
Ingredients:
For Saucey Sauce: * !/4 cup or slightly more (im a coco milk type of guy) of coconut milk * 1/4 cup peanut butter (no salt, preferably) * 2 teaspoon Soy sauce * 1 teaspoon red vinegar * 1 teaspoon chili flakes * 1 Tablespoon brown sugar * 1/4 to 1/2 lime * 1/2 a clove of garlic, crushed * a dash of tumeric * a few bits of basil * a few tablespoons of water, to be added last --------------------- * 1 cup dried rice --------------------- * 1 teaspoon Earth Balance or Pure (or local vegan butter replacement) * mushrooms of your choice (i just use button) * 1 bell pepper * Broccoli * Baby corn --------------------
Start with rice, 1 cup dried rice should yield 2 cups. Mix all ingredients for peanut sauce, adding water last. put on a pan on low heat, stirring occasionally. I put the vegan butter on a skillet, medium heat, added 5 sliced button mushrooms. i then sliced up my pepper, added it in. Next, i tore up a bit of broccoli with my hands and tossed it in. finally, a little slicing for the baby corn. i turned up the heat, stirring occasionally. checked on peanut sauce. i put rice on 2 plates, added on the veggies, then smothered with the sauce. good with a white beer, like hoegarden. enjoy!

The key to Indian dishes IMO is finding a solid curry paste/sauce that you enjoy. There's thousands of variations out there, so don't be shy in trying new ones! Coconut milk based curry sauces are my favorite.

yeah man, you gotta use fresh spices, fenugreek, corriander, cumin, nutmeg, cinnamon, cayenne, cloves, black pepper. Put that spices mix w/ oil on your veggies. I reccomend, mushrooms, bellpepper, and asperigus. Make a sandwich using toasted french bread.

Daaaaaayum my mouth is watering now, thanks for all the recipes!
Here's a delicious one:
Chick-Pea Loaf: 3 cups chick-peas 8 cups water 2 tablespoons oil 5 garlic cloves, diced 4 onions, diced 3 stalks celery, chopped 2 carrots, grated 1/4 cup tamari 2 tablespoons parsley, chopped 1 teaspoon cumin powder 1/2 teaspoon garlic powder 1/2 teaspoon sea salt 1/4 teaspoon turmeric 3 tablespoons tahini or peanut butter (the heady kind) 1/4 cup tomato sauce
Preheat oven to 375 F. Place the chick-peas in a large pot with water to cover and allow to soak for 3 to 4 hours or overnight before cooking. Drain water. Using medium heat, cook chick-peas in 8 cups of water, till soft (1-1/2 to 2 hours; or, approximately 1 hour in a presuure cooker). Drain the liquid off, and mash the chick-peas well.
Heat oil in a large skillet; add the garlic and onions, and saute for 5 minutes, till tender. Add the celery, carrot, tamari, and seasoning; saute for 5 minutes more, till vegetables are tender. Add to the mashed chick-peas and mix well. Add the remaining ingredients.
Oil two 8"x8" baking dishes (I just use one larger one); divide the chick-pea mixture between the two pans. Sprinkle paprika on top. Bake for 30 minutes, or serve as is without baking.
I got this from an old school vegan cookbook my girlfriends mom gave me, whoever made it knew wtf was up haha. This chick-pea loaf is THE BOMB!
Once I can afford it I'll try some of these recipes out that you all shared.
