Did you mix up the bag after it was 20% done or so? That spreads out the colonized grain into uncolonized areas and speeds colonization.
Injecting water won't do anything, the grains won't absorb it. You would have to soak the grains in so much water it would probably hurt the myc and risk contamination.
What does the bag look like? Is the 80% colonization in a single area or a bunch of smaller areas? If it is one big area just mix the grain up to spread the colonized grains out. It will make the myc "shrink" and after it is done it won't look as colonized as it was. Don't worry that, give it a few days after that and it should be fine and probably fully colonized.
If you have several colonized areas and they just stopped growing it could be a number of things. The two most common would be too hot or an infection of some sort.
