initiating pinning on a casing?

I just moved my grains over to bulk sub, ended up using 80% coir, 20% coffee (then adding 10% gypsum to that). In a few days i will be mixing up a 50/50 casing and casing my bulk subs... i'm just wondering about how i initiate pinning after this has colonized? I've read about cold shocking, dunking and rolling cakes, but how would i go about doing these things with trays full of substrate? i'm not going to be able to pull the sub out of the try to dunk it in water sooooo........ if anyone can give me some links or some information about good pinning strategies for casings. Also, information about how to bring about another flush after it has fruited would be appreciated (i assume this will be very similar to initiation...)

I always case and place, there is no need to re-incubate the casing.
Your first set of pins will come from below the casing layer, and your second will come from both below and the top casing layer where hyphal knots formed.
Try a case and place and you will likely get larger second flushes then first, and really healthy third flushes as well.

After my sub is 100% colonized, I case and then lay wax paper on top of casing until myc starts to poke thru. Then I introduce all 3 pinning factors. It has yielded nothing but positive results but there are many methods. I just had 4 monotubs yield 37oz dry using this method.

all 3 pinning factors? light, moisture and air exchange? I don't plan on re-incubating the casing, the bulk sub is incubating right now, but i was going to toss it into the FC after casing. Thanks endepth, i've seen that post before and will probably follow that quite a bit, minus the re-incubation of the casing, unless others have opinions on that and can give me good reason... there's a bit in there about subsequent flushes, but what do i need to do to harvest the first flush, then prepare it for another?

You shouldn't 'incubate' the substrate or the casing(or even the spawn for that matter), but you should allow a week or so for the casing layer to partially colonize before introducing fruiting conditions. Doing so will result in a fuller, more even flush. Many growers place the tray into fruiting conditions right after casing, but your flush will be fuller if you wait a bit.
If you want it fast, coir/coffee fruits very well uncased. You can simply apply fruiting conditions as soon as the substrate has been colonized for a day or two. RR

i'd rather go for production/more potent fruits... no need to rush things at this point. I'm definitely going to case it with 50/50, and i will probably let the casing colonize for a few days before introducing it to fruiting conditions...
