Slowing jars on purpose
    #803215 - 08/07/02 05:57 PM (21 years, 7 months ago)

I am going out of town and have some fully colonized PF jars with B+. I would like to put them in the fridge to slow further growth until I am ready to initiate pinning.

Can I just leave them in a dark area? I am concerned that they have been exposed to enought light in the cabinet to initiate pinning. Would I be better off putting them in the fridge to slow metabolic activity? Am I in danger of killing them if they stay at 40 degrees for a week plus?

I have read about cold shock but I haven't seen anything about longer duration coolings.

Is it just me or does someone ask this question at least once a day?
