overall i think most people prefer younger mushrooms, that said it looks like they may be a day or 2 over.
with oysters the caps slightly curled "down"
so yours would be ready to pick, enjoy your meal

should of picked them a lil sooner but they still look delicous what kind of oysters are they?

For sure! Probably cook some up in some butter tomorrow for breakfast... hmm.. omelette sounds nice..lol. Flushme: Did you prepare the ground before sinking your cake, or did you just toss it out there.. thats pretty cool.

actually i can't remember it was a while ago, it was probally just wild bird seed
i have some blue oysters i just put in the FC, can't wait to see them grow out

actually i just did a search and it was wbs with 50% sawdust
the interesting thing about this blue oyster grow i have is that i threw some table scrapes into the spawn to see what happens(corn husks, corn cob, pea's, raisins, used coffee grinds, and then straw and sawdust)
makes for a very cheap substrate

i just dug a small hole and then burried it about 1/2- 1" below so it wasent exposed and then watered it every day very heavy for like maby 4 days but you might not even have to if its humid or rainy, they fruit easy out side. i had a spent cake and i was gonna throw it out then my mom buried it in the frontyard and some poped up in about a week so ive been burring my spent stuff since

Thats sounds like a cool substrate..lol. Did you pasteurize it all together?
Nice.. I'm gonna redunk mine a couple more times, then try the outdoor thing.. sounds awesome.

nope i pressure cooked it for 2 hours i think, i just got a big stew pot in the kitchen, you'd be amazed at how much substrate you can get from just a few weeks of coffee.
just a note however, so far ive only use table scrapes "with" 50% sawdust/straw.

I can't notice much difference in flavor between young and full size oysters, so I wait. The best way I've cooked them so far is dipped in egg and bread crumbs and fried in shallow oil. You made me reconsider cakes.

It's more of a texture thing (older is tougher) and more important in wild ones cause younger shrooms have had less chance to get all buggy. Spore load is an issue indoors too, Oysters are prolific spore producers, not such a problem with a few cakes but a few straw logs allowed to get to that point indoors would dump billions of spores. Enough to clog a flow hood filter or be a health risk to someone sensitive to mushrooms or with asthma...you could end up growing oysters on everything whether you want to or not. nice little cakes though!

mix some flour and pepper and dried garlic, dip em whole in that, then in buttermilk/pepper > tempura batter then fry in a pond of oil. Enjoy.

there's an art to cooking shrooms. You need them to sear in all their juices, and let them sit, to sear. If you keep stirring them or 'sautéing' or flipping them they release tons of water and become a juicy mess. You almost need to burn them for the fats to caramelize .
