I see all these post and questions about soaking grain and simmering grains. I also still see that people think that sunflower seeds cause contams. This is very untrue. As for soaking or simmering for hatching endospores and lowering the risk of contaminants I would say it isn't necessary for wbs although I would recommend it for rye.
I used to mix wbs and water at a 2:1 ratio in the jar and pc for an hour and everything was good as far as contaminants go. The grain would be a little lumpy but shaking the jar while it was still warm would take care of this problem. Now I do something a little different and I am very happy with the results.
With either Rye, which is a much better spawn/substrate for growing, or wbs I simmer and rinse. I find that there is no need to soak to kill endospores or to get the right moisture content. This is with both grains.
So here it is with pics. I only needed to make one jar and I wanted to demonstrate this using both grains so I took 2 cups wbs and 2 cups rye and put them in a pot. (The same pot that I melted the syringes in last night) The wbs
 Adding the Rye. You can see the dust coming off the rye. This stuff is dirty
 Adding water. I usually fill it to an inch or two above the seed. Water content will be figured out later
 I bring it to a boil and then turn it down and put on the lid
 I then scoop the sunflower seeds out. I do not try to get all of them. These will not cause contams, they will not screw up the water content, they do not have bad oils, they do not increase the potency of active species. The only reason I remove them is for better consistency of the grain. Consistency isn't meaning water content.

I take a seed out and pinch it. You do not want a dry core. it should be soft, wet, and the shell should be intact. Again this is for consistency, not for contamination. Cracked seeds stick to others Notice the amount of water that is still in there

Now I drain the excess water off of it and rinse. Notice the dark brown syrup coming off of it. This is the sticky stuff.

Now I rinse until the water is clear. It only takes a minute. I also use cool water to cool the seed. If hot grain is left out it will continue drying out which is not what you want. Notice the steam in the picture.

I jar it up to just about 3/4 full. If the grain was sticky or lumpy this would be way too full. There would not be enough head room to break up the lumps.

Here is a video of the grain 2 days after it cools and it has not been shaken yet.

I'd never jar them up that wet.... The grain should be dry to the touch when handled before you put it in the jar. And the soaking is to open the seeds up and soften them. I recommend soaking before a quick simmer, as I've never had issues with this method. (Rye)
And like tahoe said, Rye>WBS.

I want them to have as much water as possible. Dry to touch means less moisture.

This is my master peice. I call it "Traffic" To me it shows the adaptability of mushrooms to thrive in the ever so populated areas of the inner cities.

It's a photo. Why would I be "embarrassed". You should be embarrassed that you're still crying about this shit.
