Bulk Sub Colonization

I've read a lot of differing opinions on when to case a colonized bulk substrate tray. Some people seem to case when the bulk sub is completely white, others seem to case when the mycelium has taken over about 90-95% of the tray.
I would like to get some opinions on this. It seems if you let the myc completely colonize the bulk sub you could risk drying out the tray, but if you don't let the bulk sub completely colonize can you still properly initiate pinning?

Since the tray is covered, you really aren't risking drying it out. Besides the casing does have some moisture to it because you mist it.

From my reading on this site .... consensus was :100% colonized ... some even wrote : 101% colonized.
From my practical experience: (multispore WBS to HPoo and Coffee/Coir bulks) I would never get 100% .... and I would wait and wait and get tired and finally case it at 95%.
The casing layer, if it is properly hydrated to field capacity, will provide moisture .... and you mist of course .... and you rest and dunk the bulk sub between flushes.
I once thought that I had missed the timing on casing .... I was out of town and felt that I cased late and 'buried' the almost pinning bulk surface ...... Then I saw a nice post by Fahtster on 'late casing' ... his preferred method.

Kind of going off topic for a second but have to say I have seen perfectly healthy casings suddenly acquire cobweb after being dunked after a flush. Don't know why but I do know that that grower will only mist heavily after a flush. The ones that were only misted heavily and not dunked went to about 6 flushes.

I find dunking to be a disaster. The substrate attempts to float, and trying to keep eight casings in their containers will leave you with a messy bathtub.
Not to mention they're a bitch to drain without damaging themselves.

there are ways of doing this without running into any of those problems.
OP- i case mine at 100%. probabally a little longer now though because i mix up 2 qrts sub and 1 qrt spawn and apply that to the top of my bulk substrate to aid as a contam barrier because it will colonize super fast. so after that 100% colonizes ill probabally wait another week just to make sure the bulk underneath is colonized.

I have heard some growers case when they mix the spawn and subs, I always case a day after it reaches %100 so like uncle_rico says %101 
Never done it any other way, I suppose it would be interesting to experiment.
