why do some cakes break up easier than others?

I've noticed half pint cakes almost crumble when I break them up I encounter very little resistance but with pint or quart size cakes even the smaller pieces are noticeably more difficult to break up. Does anyone know why this is?

I don't have a huge amount of experience, but I believe it has something to do with the contents of the jars instead of the volume.

The smaller pieces (BRF/Fine Verm) are more tightly knit than the larger grains, causing a more stronger hold on the substrate.

Maybe that is why BRF cakes are more suited for fruiting as a cake, and grains are only for case&spawn.

A "more stronger" hold. Exactly...
