I read 1 gallon of water per brick of bed a beast, but i couldnt find anything on Eco Earth. Can somebody confirm this for me? thanks

bed a beast is probably just another company that refines coir, the bricks all expand the same, seven liters.

Do you think it would be ok to use the monotub to hydrate it in or is a bucket necessary?

Which ever you prefer, I personally soak it in whatever is available to me then package it in ziplock freezer bags for storage in the freezer prior to pasturization.

Sometimes it depends on the size of the brick, even if you buy them in the shrink wrapped 3 pack. I usually put two bricks in a cooler and dump in 1.5 gallons of water and leave it for 15 minutes, it will be obvious if you need more water at that point. Two gallons can be too much if both the bricks are slightly shy of average size. I have used EcoEarth in all my bins thus far.
I noticed they started selling an uncompressed 8 quart bag for around $10. You get 20'ish qts if you buy the 3 brick pack for the same price at 6-8 per brick.

It doesn't need to be sterile during the hydration process but you should always pasteurize all materials used in either bulk spawn or casing material.

I've seen bricks of bed-a-beast that are straight skimpy... half as thin as some of the other bricks on the same shelf.
They may still weigh the same tho.. ? it could be a density thing.
