Overheating during pasteurization

Had a pretty good amount of some substrate I mixed up in autoclave bags in a water bath. The only large meat thermometer I have was in use so I just had to watch the water temp. I had planned on just letting it get to 160ish and just leaving it 6 hours.

Anyway, I got a phone call and when I came back the water temp was up to 200. I pulled the bags out and set them aside for now. They could only have been at that temp for 15 minutes at the most, more like 10. I don't know if they hit 180 internally or not but if they did it couldn't have held that very long. How long is too long?

If I had to remake it I would have to go get more stuff and I kind of need it soon, spawn has been sitting for a while. Do you think sitting at that temp for that short amount of time would hurt it or do you think it is still safe? Anything I could do to help the "good" bacteria in case it was made sterile?

I routinely boil the water the bags or jars are sitting in. It doesn't matter what the water temperature is, what matters is the substrate temperature which takes quite a while to come up to temp.

Heat until the center of your substrate reaches 140F and then maintain that temp between 140F and 160F for an hour, at which time you remove the substrate bags or jars from the hot water.
