My Vegetarian Chili

serrano peppers tabasco peppers jalapeño peppers chipotle peppers cayenne peppers yellow bell pepper red bell pepper corn black beans pinto beans garbanzo beans lentils red beans onions leeks garlic cilantro (fresh) tomatoes tomatillos quinoa water and 2 bottles of dark beer ("Blackened Voodoo" brand)
Use as much of each ingredient as you feel suits you. I have no hard and fast rules on making chili.
The seasonings are:
cayenne pepper powder cumin turmeric thyme Choose your own proportions...you don't need me to tell you that...its chili! It tastes great and will clean you out.

I cut em up and throw them in. Watch how many, and get them at varying levels of ripeness so there is a variety of antioxidative colors. I have eaten it cooked for an hour and cooked all night in a crock pot. The crock pot version was best. Go very light on the turmeric...heavy on the cumin for my preference. I would give exact measurements, but I didn't take any. I made about 5 gallons of this stuff this week.

Well I'm not a vegetarian but I LOVE me some veggitables. I would add a nice chunk of bittersweet chocolate to that recipe sounds good though. Maybe grill those chili's before throwing them in the pot, would add nice texture and flavor to the peppers, and a touch of lime.

All of those ideas sound great. Let me know if you try it. My main innovation was using quinoa for texture instead of meat. I am experimenting with eating more vegetables after years of eating very few. I am a vegetarian for now, but I have not sworn off meat by any means. Grilling the chilis and adding lime is something I might try next time. I am also thinking about trying yucca from a recipe I recently read also. Lime might go good with the yucca!

yeah, yucca is good stuff. Some celery root might be nice too, and maybe some egg plant. Veggies are undoubtable delicious. I think you need some fungus in that recipe. Maybe some king trumpets or something.

That sounds delicious.
Hominy is also good for added texture in lieu of meat.
