Polyporus squamosus ?

ok right away this is not a cultivation question so much as it is an inquiry as to cooking, recipes etc. Polyporus squamosus (dryad's saddle, pheasant's back etc) is something I come across rather frequently and despite it being classified as an edible the couple times that I have tried it I've found the texture to be rubbery at best, and really have a hard time getting past that to evaluate it taste wise or begin to consider possible uses. My first attempt was definitely with specimin past their prime, but the second time I harvested only younger ones and the difference was only marginal. anyone know of a prep, cooking method, something.. that works well? thank you all for your time. =)

they are quite prevalent in elm woods in the midwest. hey taste and smell like cucumber or watermelon rinds...and are one of the few mushrooms considered safe to eat raw if you so choose.
cooking will do nothing but toughen this mushroom, and the flavor is not objectionable....its just not mushroomy or special in any way in my opinion. I do know people who cook and eat these...generally taking the smallest ones they can find- certainly nothing larger than a human ear.
im sorry i dont have better news for you- if these were better to eat i could pick basketfuls of them myself.

they taste great in soups and stews. Nothing like a heart mushroom soup with mosa's and mane's.

yeah I couldn't agree more, this same technique goes for chicken polypores as well. Morel man come to wisconsin on the weekend of may 17th after mothersday, for a morel festival. Its not far from madison so it wouldn't be a terrible drive for you. The festival itself is awesome,. Plus a bunch of shrommerites are gathering.
