Log project - advice needed

Hello all
In a wood fairly local to me they have just cut down quite a lot of trees. I'm in the UK and I think that is just about the right time for the logs to have been cut for me to use them to grow some edibles. The wood is predominantly Sweet Chestnut, Ash and some Oak and a mixture of these three have been felled. I have an area of land (under a silver birch tree) that I can use to store/fruit the logs.
As far as experience goes I have done bulk indoor grows with hpoo but have never done a grow with logs. I have read about drilling holes, spawn plugs and wax, sawdust spawn and a tool used to fill holes.
I will be going to collect the logs later and am wondering what my options for species to grow with the logs available are. I have read that Shiitake love Oak, but don't like Ash. I'm not sure what I can grow on Sweet Chestnut or Ash. I am open to trying any particular species/strains that will work with those logs and my experience level.
Would anyone care to offer me some guidance regarding species and log selection (I really don't wanna haul anything out of the wood that turns out to be a wasted effort).
I would also be grateful of any good reading / teks to help me on my way.

There's a wide range of species that will grow on those hardwoods. In GGMC, paul has a chart showing what species prefer which hardwoods. RR
