creamy lemon primavera

What you need... 1 Cup Plain Yogurt 1/4 Cup Chicken broth 2 tbsp lemon juice 2 tsp cornstarch Some pasta (i used rotini) 1 tbsp oil 2 cups snow peas 2 cups yellow squash (thinly sliced) 1 cup red pepper (chopped) Onion (chopped) 1 tsp lemon-herb blend spice 3 chicken breasts (I marinated mine in a lemon/garlic sauce little sauce about 12 hours in fridge) andouille sausage (cut into slices) salt and pepper (to taste)
First cut up all the vegetables. Season with some salt and pepper.

Start your noodles with some water, salt and some chicken broth, bring that to a boil.
Take your yogurt, lemon, starch, and herbs, salt pepper, mix together and set aside.

start cooking the chicken on a hot skillet. after a few minutes take chicken off and cut into strips. add a little oil and return to skillet.

Next add some of the sausage to a skillet. Cook them till they start to sweat. Then add the vegetables and a little oil and chicken stock. Cook till satisfied

take chicken, vegetables, and noodles off stove. Drain noodles and then plate. Add the veges on top of noodles then the chicken. Add that sauce you made earlier to the top. enjoy.

Mmm... can't go wrong with pasta - and those veggies look beautiful! One question re:

Why cook the chicken a bit before slicing? If it's 'cause you have dull knives, then I get it - but if you have sharp knives, it seems more efficient to slice the chicken before starting the quick fry. Afterall, you don't want to be handlin' more raw chicken than necessary, if it can be helped!

yes very dull knifes. infact all i got is a 5 dollar knife i got at walmart. no sharpening stone either. so its old and weathered
