What am I doing wrong?

I did 6 cakes. I let them incubate for about 8 weeks, because the heat wasn't as high as it should have been. By that time they were pretty fully colonized but not pinning.
I then fruited the cakes. I got a very small amount of mushrooms (about 2.5 g dry), a bunch of white puff balls on one cake. I think I may have used different strains of spores on that one cake as I ran out of one of them. So I'm not too worried about that.
The first flush, as I said, was very small. There were maybe 5 or 6 little mushrooms from one or two cakes. After waiting a week or so for more to grow I dunked them for 12 hours. The second flush had 2 medium size mushrooms and more white puff balls.
Now some of the cakes are extremely soft - like they will fall apart if you pick them up (2 of them actually did fall apart). A few of them are still solid, but I haven't seen any growth. This is my third time doing this - the first time I only did 3 cakes and I got about 3g of dry mushrooms. The second time the cakes got contaminated and I got nothing.
Am I doing something majorly wrong? I see pictures of people with huge flushes and my cakes barely grow anything.

sounds like the cakes were not fully colonized when you birthed them, but 8 weeks is a long time to fully colonize, perhaps your substrate mixture was off

Hummmmmm ?
When I used to do cakes:
A fully colonized cake .... especially one that has produced fruits for a while is compact and tough. Won't fall apart.
Not fully colonized in 8 weeks ? Do those cakes smell OK ? When you get bacterial contamination, you will often see a thickened border on the leading edge of the mycelia and stopped growth and 'the smell' and cakes that will fall apart.
A fully hydrated cake is heavy ... and a dried out cake is very light .... it is very obvious if you are noticing.... Dunking and rolling is good .... rolling for the pinset and dunking to help increase production.

sounds like another case of someone not following directions to the"T" puff balls of mycelium usually means the surface isnt wet enough
-------------------- Stop experimenting half way through your first grow. Grow it to maturity, watch it, learn from it. Do this a few times then experiment with different ideas and figure out what works best for you.

I heard that the puff balls could be mutants or something because I did use two different strains for one of the cakes. It might be bacterial contamination but there certainly wasn't any mold. The cakes did fall apart though.
I guess I'll dunk and roll them again and if nothing happens bury them outside.

well sometimes the differnt strains will not form connections and fall apaart. but there still should be big chunks of cake. Any pics of this falling apart.

8 weeks WOW!!!! my cakes fully colonize in just over a week. something is definitely not right here. better re-read the teks and try again. DO NOT DEVIATE FROM THE TEK!!! THIS IS CRUCIAL!!!

I've had some grows from multi-spore take their time from inoculation to last flush, and some that take off and never slow down... I always thought it was luck of the draw....

I don't know if they were even fully colonized. I never saw any pins.
As for the falling apart I do not have pics but I could take some. They basically just fell apart like cakes of wet sand. There may be some chunks. I will check.

Your water content may have been off , too wet maybe?? and it did not fully colinise, even in lower temps your cake should colinise fully well before 8 weeks, i incubate at around 75-80 and have fully colinised cakes usually in about 3 weeks.
Fully colinised cake should hold itself together quite firmly and if you try and break it apart it will break up into chunks.
