What are these things exactly? I'm trying to read about them but it's really hard to grasp it the way it is written.

Binaural recording is when you record everything with doubled up microphones, 18cm apart, which is the typical distance between a person's ears. Two tracks are recorded simultaneously from slightly different positions. The effect is that the sound (when played back in stereo headphones) takes on a 3D quality, reproducing the natural function of having two ears.
Pearl Jam released an album called "Binaural" in which they used this technique a lot.
I don't know if "binaural beats" is different than binaural recording.

Here's an example. Listen on headphones if possible.

^^Obviously you need to download the track to perceive the effect, not just preview it.

Binaural beats are two combined recordings of different wavelength sounds, used for "entraining" the brain frequency for meditation or OOB. I've never found it at all useful for OOB, but it does make it easier to slip into a meditative state, going into Alpha brain waves (8 Hz to 12 Hz).
