Preparing to fruit, couple of questions to tie loose ends

I've been preparing my WBS jars and my first batch is fully colonized and ready for casing. I plan on doing a couple of different things with the other jars that are still incubating but this first round, I will case 50/50 peat/verm. If I can get my hands on calcium carbonate and/or cruched oyster shells, I will add 5% of that.
Now, I have a pretty busy schedule so i won't be able to case the jars till thursday or friday. Will I be ok taking the jars out of my incubator and putting them in a dark place at room temp till I'm ready or should I put them in the fridge?
I have 5 pint jars that I'm going to case. I would like to have a 2" substrate to case. Anyone have a shortcut or knowledge of how big of a try I should get for 5 pint jars to accomplish 2"?
Lastly, I'm going to get a opaque rubbermaid as my fruiting chamber. As I said, I will have one (or if you guys recommend i make 2) casing in chamber. Will that casing create enough humidity or should I pick up perlite to up the RH?
Thanks for everyone's help and knowledge on this site thus far. I know some of these questions might be found via the archive but I've done a good share of searching and reading.

You should be fine either placing in a dark closet, or in the fridge even if you are paranoid about invitro pinning.

Ask Google. If you ask how many cubic inches in a pint, it will tell you. Google will answer all sorts of questions about teaspoons, pints, cubic feet, and so on. Good luck.

Cased wbs is often a poor fruiter. Read up on spawning to manure. RR

I know it's not the best substrate but people have said they've done it with great success. I plan on spawning to coco coir when I get my hands on some. Casing need 82-90% RH correct? Won't using perlite be too much RH for the casing?
