A quick FYI for anyone who needs to perserve some fresh mushrooms...
Get a food dehydrator from Wal Mart for forty bucks. Plug it in, throw the mushrooms in and turn it on. It throws off an awful lot of heat, and even a 40+g fruit body will be dry overnight (Mine shrunk down to 2g) with no noticeable loss of potency.
I tried fresh and dry.
It takes a much, much greater amount of heat to start destroying the potency. So for all of you nervous nellies out there, go ahead and grind them up and bake them into chocolate chip cookies - it's a kick ass method of avoiding the taste.

food dehydrator set at lowest setting = 95 degrees. Oven set to bake cookies = 350 degrees
Your thread doesn't make much sense. Because you can dehydrate mushrooms at 95 degrees without degradation does not mean you can do the same in an oven at 350.

Mmmm... I dried my mushies in a dehydrator that did not have a temp control on it. They were wrecked. No potency whatsoever. I put a thermometer in the dehydrator and it went off the scale, to at least 70 degrees C. I wouldn't want someone else to experience my disappointment. I understand that some dehydrators have temp controls and people are successfully using the lowest temp setting but I'd avoid one without.

I purchased a NESCO American Harvest dehydrator, which has a temperature control. It did a fantastic job drying a ton of shrooms overnight (at 95 degrees F) such that the following morning I was able to powder them and use the capsule tek to fill a shit-load of clear 00 caps...my preferred way to get around the nasty taste of dry shrooms. I can tolerate the taste of fresh shrooms - not dried.
When not drying shrooms, its handy for apples, bananas, and other fruits. I heartily recommend the temperature controlled dehydrators (only). They >>DO<< appear to work without a perceptable loss of potency.
