Planets Rotating Around The Sun

do our planets rotate all in one parallel line like the above picture shows or all they all a little off? what about the moon?
how do scientist know that there are forms of gases and whatnot on these planets?

I don't see a picture but the planets don't make exact circles. For instance Earth is actually closer to the sun in the winter than it is in the summer (tilt is was causes seasons). And until a few years ago, Pluto (no longer a planet) was closer to the sun than Neptune.

No the planets dont all go at the same speed, see keplers law.
Yes they are aligned in a plane. Not perfectly of course, but more or less in a plane. Interesting indeed.
If you want scientific answers, you should try the science forum. There are many smart individuals there who love this shit.

they are always going around the same like in the picture? none are faster than others? so there could be another earth just like ours that is directly on the other side of the sun and we just dont see it?

The closer to the sun the faster they go. That was discovered by kepler. We would know if there was another planet on the other side of the sun from various space craft. There is not.
How do scientists know some planets are gases? From the light they reflect. Light comes from atoms, and different atoms make light at different colors. Look at the colors and voile you know what atoms there are. The technical term is 'emission lines' and 'absorption lines' if you want to look the shit up, its pretty interesting.

The diagram is accurate; the planets are in the same plane. Here's a decent explanation for this:

Our moon isn't quite in the same plane -- it's about 5 degrees off. This is probably because the moon was not formed the same way the planets were. (I think the current favored theory is that it was created when another small planet collided with Earth.)
The gases are primarily determined by spectroscopy. Different gases absorb different wavelengths of light, and no two gases absorb exactly the same wavelengths (kind of like how no two humans have the same fingerprint.) By analyzing the light coming off an object you can deduce the gases that the light has passed through. (Look up spectroscopy on wikipedia if you want the gory details.)
Oh, and if you want a fun piece of party trivia, ask someone to draw the Earth-moon distance to scale on a piece of paper (try it yourself right now). Most people will draw something like you see in your picture, with the moon fairly close to the Earth. Scroll down to the middle of this page to see the actual Earth-moon distance drawn to scale:

What's all this nonsense I see posted here about planets rotating around the sun? Clearly they are bound to crystal spheres rotating in the heavens around this blessed disc we call Earth. Damn Copernicans. Next thing you know they'll go and contradict Aristotle claiming that there are more than four elements.

But you can't really agree with that. For if the Moon did not rotate around Earth, it would follow a path similar to those of the other planets.
