its been a long time since i've done this. lsat time i know i put a wash cloth underneath the jars to keep them from getting to hot while i boil this. (by the way its just half pint brf cakes).
after the hour i plan on putting foil over the top and letting it cool over night. do i really need to put a wash cloth underneath it?

put the foil on the jars before you start boiling, and yes, a cloth underneath will help diffuse some of the heat that might evaporate the water in your jars. It will also prevent them from possibly cracking.
if you put a lid on the pot, the foil prevents water from dripping into your cakes.

You put the foil on them as soon as you are done maken them.
I dont think you will get the temps you want without a lid on the pot. With the no p.c. pftek you are useing the temp of steam and it being able to get higher then the temp of just the water. So you want to trap the steam in the pot with the jars.

Yes. I did that before worked out fine. Just make it tight before it gets to warm or it can be a pain in the ass lol.
