storing casing material

i have a couple mono's that i'am dunking right now and i planned on making up a few qrts. (3-4) to fill in the divots and around the sides where it has shrunk.

i also have a few rye jars colonizing and was thinking about just making up casing for this right away to.

my question is- would i be able to store in the fridge or maybe even freeze the extra casing material?

ya u can freeze the casing but its a bitch to thaw. This is the only way I know

some people pasteurize in quart jars on the stove top (bring water to a boil.. shut off and maintain temps up to 170)...and then just open them when they need casing material.

and then some people dont pasteurize at all.... FunWithGus just uses hydrated lime and gypsum in his casing to prevent contams. If I could find those I would do it his way.

i always add gypsum and lime in my casing material. so he just stores it in jars at room temp?
