Elevate your cakes on some perilite soaked in water. It helps the humidity.

Don't sit cakes directly on perlite. Not good for them. Put down a layer of perlite, take some lids or aluminum foil and double end case your cakes. Search for double end casing. Perlite doesn't NEED to be sterilized cause it's a rock...but it;s probably good procedure to do it anyway. The bluing is normal, quite monkey pawing 'em and they'll be fine. Bluing can also occur if there is too much stress on the mycelium eg too hot or drying out. 81 is generally considered pretty high for fruiting temps also...

Standing water in an FC isn't a very good idea. Even with the bubbler running through it, it's still a magnet for all kinds of contams.
Also, heating an FC from the inside is another bad idea. If the temperature outside of the FC is lower than the temps inside, you'll get heavy condensation on the inside of the chamber, which will lead to more water sitting around all inside your FC.
Basically, there are better ways to do this that involve a lot less hassle on your part trying to keep your rig from turning into a smelly box full of stagnant water.

Bubbler sticks under the damp perlite are wonderful for adding humidity (and a little bit of fresh air). But I agree that you don't want to have standing water. Just damp, strained perlite.

that tempature is fine. try the perlite it might surprise you how easily it gets to 100% RH FC means Fruiting Chamber hope this helps

I've never sterilized perlite before using it. I take it right out of the bag, soak, drain, spread 3-4 inches over the entire bottom of the tub (over the bubble sticks), and put the cakes on the jar's lids or foil.
Bake the perlite in the oven after you're done with the grow if you want to reuse it.

Is perlite so expensive that you can't trash it and use fresh! If you can't afford perlite, you might have the wrong hobby.

It's bad to put the cake directly on the perlite because of possible contaminatin issues. Some also warn that it will waterlog the cakes/shrooms.
The air coming through the wet perlite is very humid. And, when you mist, you can not help but spray the perlite, keeping it moist. If in doubt, spray the perlite down when you have the cakes dunking after a flush.
Also, I have my air pump in a small tupperware box that I've cut a hole the lid and glued an air filter onto.

That's a fantastic system. If I had the need for a lot of shrooms, I would definitely look into that set up. I just have the need to fruit a half dozen cakes every 6 months or so, so it wouldn't be worth the investment for me personally. But, it looks great.

The set up is totally relevent to whatever size tub you are using. You could use a tub half the size of that to suit your needs. The important point is that you have created a self sustained environment that is extremely functional.
