Why is my cake turning blue?

Ok, Im brand new to this whole thing and I have a question...I'm doing a casing and some cakes just to get a general idea of both. I did up 16 jars and none of them got contaminated. However, after dunking a few for PF cakes, two of them turned blue. Im pretty sure it's not bruising because i only touched them on the bottoms and the blue is on the mid to upper part of the cakes. The only other reason that I know of for them to turn blue is dehydration and I don't see how they could be dehydrated after being dunked. So what is it? Any help would be greatly appreciated...Thanks.

How long did you dunk? Did you put anything on top of the cakes? maybe those cakes were slightly larger from the other cakes shrinking from colonization.

they're probably bruised....
Robot of mine put to much weight on the plate holding the cakes under water... Entire cake turned blue!!! But after letting it sit in the terrerium for a few days it turned almost all white and it was fine.
I put a 30 pound weight on top of the dish cause the dish alone couldn't hold down 8 cakes. Heh, damn dish and wieght nearly smashed the poor cakes. Now I use a plate that catches on the sides of the tank so it doesn't smash the cakes....

My friend just had the same prob today. The cakes have a few blue-ish spots on top, he thought it was contams so he pulled them out and dunked them in 100-1 bleach/water (aka bleach tek by hippie) then stuck them back in the chamber to fruit. He hopes this would kill any contams that might have been there. He will let me know how this works so I will fill you in.

I just had the same problem, right after dunking. It is possible, I suppose, that when dunking, since the cakes float, that they are being pressed just a little too hard against the top the the container. I just took the dry verm out of my jars, put the cakes back in and filled with straw water. So they may have been against the lid too hard from the water forcing the cake up. But I think my is because of something different. Possibly fanning. Someone said that from fanning you could dry out the top of the cake, which is exactly where it occured.

I wouldn't mind. it's probably just bruising for some reason and they'll be fine..

Bluing is also a good indicator of dehydrated cakes
