Critique my planning phase

Hey there! I am planning my first grow and was wondering if you kind folks could give me a hand and point out any obvious mistakes you see. The main thing is, I am trying to keep it as cheap as possible. Well I was planning on using the PF Tek and the "Lets grow mushrooms" video as a guide with only a few minor alterations.
[1]The substrate I was planning on using is wild bird seed, minus the sun flower seeds.
[2]I plan on inoculating quite a few half pint jars, opposed to only a few quart jars. That way I have more chances because I am planning on a few but hopefully not all getting contaminated.
[3]I do not have a pressure cooker, and was planning on sterilizing with a stock pot, but if you think that would not be sufficient, I may be able to get someone to loan me one.
[4]For an incubator, I was planning on using a dark cabinet in a warm kitchen.
[5]I plan on casing half of the cakes and half I will fruit as cakes. That way I can experiment and see which works better for me.
[6]For a fruiting chamber, I plan to use a large rubber-made storage container, with holes drilled for ventilation and plugging the holes with (I cant remember the proper name) a cotton like material that is used in aquarium filters.
[7]To humidify said container, I plan to use a layer of perlite with regular misting and fanning. Would it be OK to use an aquarium air stone underneath the perlite for extra humidity?
[8]I plan on casing the cakes into aluminum baking pans, and covering them with jiffy mix, or if I can't find that, a similar product from Miracle Grow.
Some problems I am running into though, is what strain and supplier would you recommend I start with? I need to find a supplier that is willing to work with me because I do not have a bank account at the moment or any money left in my paypal account as I am unemployed for the moment. I have a small amount of cash but I am not sure if I plan to purchase a money order or what. Well sorry to make it so long, and to ask questions that I know have been asked daily since the beginning, but I will try and keep these threads at a minimum.

[1]The substrate I was planning on using is wild bird seed, minus the sun flower seeds.
> I would go with Brown Rice Flour as the PF tek states.
[2]I plan on inoculating quite a few half pint jars, opposed to only a few quart jars. That way I have more chances because I am planning on a few but hopefully not all getting contaminated.
> If your going to use WBS, then surely use pint/quart jars, BRF for 1/2 pints.
[3]I do not have a pressure cooker, and was planning on sterilizing with a stock pot, but if you think that would not be sufficient, I may be able to get someone to loan me one.
> Never use grains unless you have a pressure cooker. You can get away with BRF with a stockpot and lid though.
[4]For an incubator, I was planning on using a dark cabinet in a warm kitchen.
> That should do.
> Your thinking of polyfil, but you dont even need it. Drill 1/8 in. holes like rogers shotgun tek shows in the dvd.
[7]To humidify said container, I plan to use a layer of perlite with regular misting and fanning. Would it be OK to use an aquarium air stone underneath the perlite for extra humidity?
> The airstone wouldent hurt anything, but isnt necessary.
[8]I plan on casing the cakes into aluminum baking pans, and covering them with jiffy mix, or if I can't find that, a similar product from Miracle Grow.
> Try plastic sweater boxes, or kitty liter trays. The aluminum pan will be ruined after first grow but you can wash and reuse plastic.
