The only hydrated lime I could fine was at a agriculture store in a 50lb bag, sold as.
Texilime Hydrated Lime.

Wondering if anyone can verify by whats listed at the link that this stuff should be ok. The contents aren't listed on the package anywhere. Any help would be appreciated.
The package does have some flowers on it, so its clear its purpose is agriculture and not construction (masonry lime).

Haha it's a good thing since i'm soaking my coir in it right now.
To pasteurize my coir I decided to use a large cooler, heat water + hydrated lime to 165 degrees then dump water into cooler mixed with coffee grounds, crushed oyster shell, worm castings and 2 bricks of coir. I'll let it stew in there while it cools before I move to spawning, any objections?

as long as there is no dolomite in the lime and its hordicultral hydrated lime which means its water soluble you will be fine.
BUT why are you soaking your sub in lime? you dont use lime in your sub. its only used for casings to help with the ph. and i think oyster shell does the same a hydrated lime. you use lime very lightly in your casing material. so i dont know what that will do to your substrate but im sure its not good

It's type N, so you're good. Type S is for masonry and has a high Mg content, so should be avoided. RR

As Per RogerRabitt's words on using Coir as a bulk substrate.
"Of course, we already know coir has a low Ph, so be sure to use lime, especially if you're adding coffee grinds. For a starting point, treat it as having the same Ph as peat and start out with one teaspoon of hydrated lime per cup of expanded coir. "
Although that ratio stated above is only around 2%, I've read most use 5%, hopefully this won't cause me any problems.
