7 days is to early to worry.
Also, how long did your jars sit before birthing after 100% surface colonization?

try not to mist like a madman. just mist the walls of your chamber. and also, are you seeing any fluffiness or knots of mycelium?

yea heavy drops hitting the mycelium does a number to em. high humidity doesnt mean water in the air, but water VAPOR in the air. so just relax on misting by indirectly misting. that is, mist the sides of the chamber. and stick with the fanning. fanning is muy bien

Not entirely true at all, You can spray a foot above them with a fine mist spray bottle and it won't cause aborts nor hurt them. Just don't drown them. Spray first then fan to get rid of any pig water drops. 7 days is a little bit to early to be getting impatient. Once the jar looks 100% colonized then wait another 5 days before you birth it, dunk roll and so one.

Theyll be just fine man don't worry. It won't ruin them in the end they will thank you. More water= bigger happier shrooms....as long as you don't drown them.

how long would be too long for them to start fruiting?

well up graded to florecint lighting today and the mycelium just keeps geting briter and thicker!! also birthed my 2 other cakes i have been letting set for the extra 5 days. Two build up the network i guess.. Also i incubated some jars with PESA spores about 10 days ago and they are about 60% colonized they are going 10 times fasterthan the f-strain did. pretty amazing

You have recieved some good advice! My friend has waited out some PR's that took over three weeks to fruit...PATIENCE is the key. You'll learn so much by the time your cakes need to be re-dunked for the second flush that you'll nearly be a master at cakes! Have FUN!
