Oak chips work well as a substrate, but take longer to colonize than softer hardwoods, like Elm, Willow and Maple. Spruce is also colonized very quickly by this species. Almost any wood will work and as long as it buried in wet well drained soil this species will colonize any celluse source, IMO.

Well, give your indoor cultivation a try, but I highly doubt that you'll achieve anything (not because of you, but because of the difficulty to do so).

The reason for this is, that you'll need a fridge that has glass front, or a cool basement, that stays between 50 and sixty degrees.

Temps in the 20ies, is way too cold for them to grow! An unheated garage is probably just as cold as the outside and therefore I guess that won't be successful. But IF you live in a climate zone, where temperatures drop down to the 20ies, you seem to like in the temperate zones of the earth, which would allow you, to spawn colonized material to an outdoor wood chip bed in spring, and -when everything goes right- harvest in fall.
I have no idea of experienced you are, but since people, who are VERY successful in growing Cubes and even Pans don't get this stuff to work, I doubt, that could do it.
But anyway, I cross my fingers for you! Give it shot!

Ahm... you should know, that the RH isn't down like that all year. There are alway a few dry days, but nature finds it's way!
And as I said: DO IT IN SPRING! Around April or May, when there's no more night frost etc.
