Remember that it's airflow, not heat, that dries things out. Heat is only useful in high humidity situations.

You'd get better and faster results if you replaced the heating coil in your dehydrator with a fan IMHO.

Hot(ter) air -> lower relative humidity -> mushrooms dry out faster.

Many advocate cool drying, and Fred is right, heat does not dry out fruits, dry air does.

Higher temps mean lower Rh, not less water in the air. Actually, warmer air can hold more water than cooler air.

Ever hear of freeze dried?
