how long do i need to incubate for to prepare for fruiting after i add a peatmoss caseing layer? can i incubate for 2-3 days and then just put it in chamber with good humidity and wait for fruits to pop up?

What method are you using to case, hyphae's pinning strategy?

is it alright to begin fruiting with a caseing layer of peatmoss not fully colonized

Ideally, you don't want the casing layer to be fully colonized. What does it look like right now? Do you see spots of mycelium starting to poke out from under the surface the casing? If so, patch those spots up with a little more casing material, then put in your fruiting chamber.
Also, be sure you have plenty of fresh air exchange. Aside from the "good humidity" you mentioned, your mushrooms will need plenty of fresh air to grow well.

ya, there isnt any mycelium poking threw the caseing layer but theres lots of humidity / fresh air via cool mist, when the fruiting chambers opened i see a little humidity cloud puff out.
im geussing they will start fruiting and just pin from underneath the caseing layer like outdoors? or am i wrong

I have two trays of Ecuador starting their second flush right now. Before the pins arrived for the first flush, there was very little myc growth on the surface. One morning, the pins just appeared (seemingly from "underneath the caseing layer"). I've never grown outdoors, so I don't know how that relates to outdoor growing.
If you've incubated your tray for 3 days and still don't see any myc growth -- what I would do is just pop it right into your FC and initiate pinning. I take it you've already done that?
How thick of a casing layer did you apply? I applied too thick a casing on recent Cambodian and let it incubate another 36 hours (for a total of 4 1/2 days incubating) before myc arrived at the surface and I popped it into the fruiting chamber. It ended up colonizing the casing layer nearly 100% and side-pinned. I still wonder if the casing layer being too thick played any role in the fact that no mushrooms grew from the top or what other factors came in to play to make that happen.

Nice. The casing on that Cam I was talking about was 1+ inches thick. I'm sure you'll do fine.
Are you following hyphae's pinning strategy? Read that a few times and be sure to hydrate the casing layer now that you've put the tray in your FC.

ONCE YOU SEE A PATCH OF MYC POKE THROUGH....PATCH IT AND THROW IT INTO FRUITING CONDITIONS
