rye berries germinated
    #7833375 - 01/04/08 08:09 PM (16 years, 28 days ago)

Hey I soaked a gallon of rye berries overnight, and now I see a few of them decided to germinate. Can I still use them? I want to PC them right now.

leaving the grain out over night is so that the endospores will germinate.

If just a few germinated, it will be fine. A proper PC'ing will prevent any more from sprouting.

PC now to prevent any further germination.

Yes, but I didn't expect the berries to germinate. It's only a few, can I still use them or will they rot and ruin the jar?

Next time, do the rinse and begin the soak in HOT tap water. It will prevent the grains from germinating.

Don't use sprouted grains. Either pick them out, or start over and make a new batch.

I'm kind of surprised that they germinated that fast. I've had great results by soaking 24-48 hours in the fridge. The reduced temp keeps them from germinating in that timeframe and keeps bacterial spoilage to a minimum.
