chicken dumplin soup for the shroomery soul

Get some stock going with some carrots, celery, get a pan sweat some onions, and garlic add to the stock with a grip of the following; fresh thyme, rosemary, greek oregonal, coursely cracked peppercorns [use two spoons to get em nice and chunky] a couple turkish bay leaves, some fresh chives, a bit of basil, some sea salt, a touch of some delicious olive oil and enough water to make your stock, then let that shit reduce for like 2 hours while you get the other shit workin.



In another stock pot, the one you'll finish the cooking in, lace the bottom with some olive oil, and 1/4 of butter, get that nice and hot, add your chicken, season accordingly with some pepper, salt, rosemary, thyme leaves, some freshly rubbed sage, some oregonal. Sear that just a bit, deglaze with some white wine, add some minced onions & garlic. Sweat them for a bit, then add your stock. Finally add some wild woodear mushrooms and taste to see if it needs any more seasonin.



Reduce that for a bit, then get your dumplins working. Boil cup of milk and/or buttermilk, 1/2 cup of butter, a splash of nutmeg, a bit of sage, pepper and some salt. Quickly add cup of flour, take off the heat and stirr till the dough starts to stick away from the pan, then add 3 egg's one at a time till it forms a sticky icky ball of doughy goodness;



Get you're stock boiling vigorously, the hotter it is initially the tougher the dumplins will be;

(usually end up freezing half of a batch in canning jars)

except just make sure the soup is real hot before adding the dumplins, so they come out as tender and delicious as possible.
