Hey guys. I'm looking for a well educated/well experienced answer. I have been sprouting cubies for quite some time. Always small scale and for myself. I'm wondering about overlay. All my casings always completely cover with mycelium. Sometiemes the mycelium remains soft and cottony. Sometimes the mycelium gets matted down with water droplets which stick to it's surface. Sometimes I get a matted surface which appears to be hard and so I deep scratch. I need to know exactly how to diagnose overlay, and what to do about it. I've read everything here and there, and there. I just need a human to human explanation and suggestions. All responses Appreciated!

Sounds like you need to increase your air flow.

Somewhat lower temps, than colonisation, are better 80 or so (but not most important/ if the temp is high, just cold shock for like 12 hours). Sounds like your humidity is high enough, since you said water droplets are forming on your casing layer. But w/o a pic/ more info, it is tough to diagnose for sure.

Overlay is basically when the mycelium is closed and does not allow the fluffy stuff out. When it's fluffy... no overlay yet. Overlay is caused by 2 factors: drops and drying.

To avoid overlay, I know only one solution... cover it with some more casing material and lower humidity so that droplets don't condensate all over the mycelium (I also heard that it is normal too, at least partly). Well, no, there is another one that should work (I didn't try that yet, because of the weather): keep the terrarium in lower temps so that you don't favor colonization.

... but I'm still a newbie having probs with mycelium covering my casings and overlaying (not in every case!)... Didn't try everything yet. So, maybe some more exprerienced guy might add something to my comments...
