Had a casing that gave off a strong sweet smell. Didn't get around to pitching it and left it in the incubation chamber.
Well, 4 days later, the sweet smell is *gone*, and the mycelium on the surface is thriving.
Am I flirting with disaster if I try to get "fruit" from this sucker?

Do you mean substrate was stinky before you adding a caseing layer? Or have you not applied caseing yet?

Bacterial contams produce the sweet smell. They usually aren't airborne like fungal contams, so I say go for it.

Good question.
I mixed fully colonized rye with coir/coffee substrate.
Everything looked fine (usual colonization rate, no discoloration) when I checked the new tray a few days later, but there was a strong sweet smell both in the incubator and from the tray itself.
I used shroomery search engine to discover that "sweet smell" prolly meant bacteria. "Shit." I left it in the incubator b/c I couldn't dispose of it right then (stealth).
Now, about 4 or 5 days later, the sweet smell is *gone*. The surface is fully colonized and looking, well, fucking great.

I guess my main concern is fruiting this sucker, then having my liver lungs and kidneys dissolved from some kind of toxins the bacteria produced while they were thriving.

chances are really low it'll produce something severely toxic I think
I remember RR even says that it's fine to eat mushrooms off a contaminated casing, but don't quote me on that

I would apply a caseing layer- let it colonize then fruit it out. it can help trigger your pins and protect your substrate.

Eating fruits from a contaminated casing is fine unless the actual mushrooms are icky.
In the wild, they grow in areas full of other fungi and bacteria that we would consider contaminants indoors and we still eat them.
