Everything I read says that mycelium need the most nutrient-rich substrate to fruit most plentifully. So determining the best substrate is merely a matter of determining the medium with the most used nutrients. But what the hell is a "nutrient," exactly?

Duh, I know it's food PHYSICALLY, what are "mushroom nutrients?" For example, when I think of "human nutrients", I think, Iron, Vitamin C, Calcium, Folic Acid, etc.

Okay then.... Mushroom (cubensis) "food" is usually found to be grains such as rye, millet and straw or the leftovers in horse or cow shit or brown rice or any combination of the afore-mentioned.

Why not read the faq's before asking such a question... DUH!

I'm not sure exactly what is most important to a mushroom, but in The Mushroom Cultivator, Appendix VI, there is an "Analysis of Basic Materials Used in Substrate Preparation". It lists such things as total dry matter, protein, fat, fiber, N-free extract, total minerals, calcium, phosphorus, nitrogen, and potassium.
