When to harvest Oysters?? *pic*

Hey all. This is my first time with Oysters, and I was wondering if there is any tell-tale signs of when I am supposed to harvest it?
I did search for a while yesterday, but I did not find what I was looking for. I will probably harvest the fruits tonight (about 12 hrs from post).
Also I left the substrate in the bag a bit too long, and it formed some weired growth, so should I pluck that too?

I was gonna say that they may have been left too late, but looking at other pics of oysters i would say leave it longer.
Take a look at these. The caps have stretched right out and the gills are complelty straight and not wavy.

Have never tried to grow them before, so thats just a guess, but it looks like they need a little more time.
I wills soon be giving the oysters a go.

Sweet. I guess I'll leave them a bit longer. I was just afraid of the fruits going bad or something.
Also does any one know why they loose color? ... They were really pink, but as they get bigger they keep fading. Is this normal?
I fan the FC about 4-5 times a day.

I harvested mine when they looked like this VVVV


 They were harvested right after these pics were taken.
Nice job though
Saute them in butter with a little salt and pepper-great flavor and texture.

I see two problems going on at once with that grow abesh. First, oysters are extremely CO2 intolerant. They can grow on pf cakes in a terrarium with lots of holes, but I still either leave the lid loose or off totally. If using substrate blocks, you really need to have them in a mini-greenhouse with good circulation to get proper cap development. Even a slightly raised CO2 level will cause the penis shaped fat stems and tiny caps. Those are pretty much useless, since most of us trim the stems off before cooking, and only eat the caps.
Second, but to a lesser degree, they need more light. I could see a few coral type formations, that never really left the primordia stage. Those are indicative of low light levels. Oysters like bright, very bright light. Even a few minutes per day of direct sunlight does them wonders, provided they're exposed to bright fluorescent light each day for roughly 12 hours.
The ones with caps probably won't grow much more, so I'd go ahead and harvest. Pick the blocks clean and let them sit for a week without misting or other care. After the week, give them a good 24 hour soak under cool water and return to fruiting conditions. Open up the fruiting chamber for more air, or if the temperature/humidity conditions outdoors are right, put them there. Good luck. RR

Ok ... the "coral type formations" had formed while the substrate was still in the bag... I had to leave it in the bag for a couple of weeks since I had other stuff in the FC. ... I guess I should have plucked all of it off when I transfered the blocks to the FC, But did not think about it.
So... I guess I'll pluck all of that and the other open caps.... But should I pluck everything??? There are a bunch of new little baby mushrooms forming, and it just seems cruel to pluck all of them. But if that is what I must do... then I will.


Also outside temps are from the 30's to the 60's (F) with RH around 60% so I don't think that is good. I will fan and mist more often... and leave the lid off for an hour every 3-4 hours... hope that works.

Ok I picked it clean. So now should I leave it without care in the FC for a week?

Glad i looked at this thread. This is my next project after sampling oyster mushrooms cooked in butter, delicious.
There not so desirable raw though, they had a similar taste to cubes, pungent overpowering taste.
Yes i know mushrooms should be cooked before eating, but certain edibles i love raw, specially button mushrooms

Air exchange and bright light are the keys to oyster grows. 30's to 60's are perfect for oysters, especially when raining. They can even fruit in open air at 60% humidity, provided you mist regularly. They'll do much better in a mini greenhouse than in a cubensis style fruiting chamber.
Flushme's pic is also indicative of lack of fresh air exchange. Makaveli8's had better air exchange, but could have benefited from even more. If grown in fresh air with bright light, oysters will have 90% or so of their weight in the caps, which is the only part worth eating in my experience. Below on the left, you can see how they look indoors, and the laundry basket on the right was placed outdoors for fruiting. Note how much meatier the outdoor grown oysters are. The outdoor grown oysters also have almost no stem, with all the weight being in the caps. RR
