Clam Chowda!!

Deliciousness in a bowl;

Start with your basic mier pwa, or however its spelt, with just some carrots/scallions/celery/blackpepper/salt/olive oil. Get that boiling, add your clams, add some fresh greek oregonal, sweet basil, some chives, a touch of nutmeg, just a touch of some ground mustard seed, let those cook covered till the clams break open and start bathing in the broth. Then remove those feller's, keep the stock cooking, cut up the clams and store in the fridge for a bit.



Then in another pan cook up some bacon strips, cook untill the fat render's to a nice deep brick red, then add some onions, garlic, a generous splash of pinot gnior to deglaze that goodness, then remove the bacon and add the remaining stuff and bacon grease to the stock pot. Add some heavy cream, some turkish bay leaves, some more black pepper, some milk, then let that reduce. Dry that bacon and break it up, or cut it while its still warm up too you. Once that stock comes together I'll add a generous sploosh of Smoked Paprika, and finally I'll add some sliced potato's, and some chopped scallions on top.



Finally I'll add some more scallions, the clams and the bacon, another generous splash of pinot gnoir , and some more cream and then let that biotch simmer for about 2 hours ish, then garnish with some more scallions and some chives, and a dusting of some smoked paprika and enjoy.

ummm, I took the last bowl of this, and added some delicious italian breadcrumps & parmeaseaen cheese and baked it at 300$ for about 7-8 minutes and it was so delicious.
