So I inoculated 5 jars about 5-6 days ago, and am used to seeing colonization well on its way by now, but my house has been pretty cold [~60f usually] lately because we're trying to keep using the fireplace. I'm assuming that the cold is responsible for the lack of colonization I'm seeing?

Yes. Most likely the cold. Also depends on whether you are using an lc or not.

Another alternative is to try the cupboard above the fridge, it'll keep the myc nice and toasty in there.

Even in optimum conditions sometimes germination might not take place in that time, but generaly yes 3-5 days you see germination.
I would get those temps up cause it could take well over a month for full colinisation.
As rice_smuggler said try above the fridge or if you a cupboard with a water heater, this can work well its what i use, in summer it maintains about 80F and in winter with some of the insulating jacket removed between 70-75F
