I try to stay under 76 during pinning and fruiting.

You need the 10 degree drop in tem to initiate pinning and fruiting.

You'll be fine witht he 80 degree temp, however it might be slightly delayed to pin.

If you can, just cold shock them for a day or two, and then set them in that 80 degree closet

shocking them by putting them in the fridge? i heard that innoculated jars (even after the appearance of mycellium) can be stored in the fridge for a couple months without problems, anyone know if this is true? -b

Sounds right to me. The lower temps cause the mycellium to go dormant (i.e. growth rate is slowed if not stopped.)

80F is a good average ambiant temp. As stated by others, your going to have to drop the temp to initiate pinning & 74 to 78 is good for fruiting. Either turn on the aircon or whatever else you have planned to cool your set up down, when that time comes.

Yup, you can stall colonization and/or store fully colonized jars in the fridge for a considerable time w/o doing harm (at least the Raccoon has).
