quality of cloning specimen

I was thinking about cloning some oyster or perhaps shii take or some other edible mushroom species. But I was wondering what kind of quality the mushroom should be.
If I were to buy some mushrooms in a supermarket for example would it be possible to clone these?? Or would they need to be very fresh??

If someone can give me a link to a good tek I would really appreciate that as well.
