popcorn questions

I am running into a problem using WBS because I do not have time to soak because I do not know until the day of that I have the option to PC some jars on a friends stove.

I read another members post that popcorn can but put straight into jars and filled with water 1/8 inch above the dry popcorn and PCed just like that, when the jars come out the PC they are hydrated and no standing water.

does this sound right? this will be the missing link to me mass producing jars :smile:

for popcorn i have used this tek with success->

for WBS if you don't have the time to ,or can't, soak for 24 hours, you can try this->

rinse seed well.slowly bring up to pasteurizing temp, in plenty of water 150f-160f for ~ 45 minites.
when the wheat grains take on the consistancy of bread dough when kneaded between your fingers,
rinse with hot water and drain.
pour a jars worth of grain into a roasting pan and blowdry until the grains are dry on the outside and will no longer stick to your hand .
lightly dredge with gypsum and stir to distribute throughout.load jars, PC for 90 minites.

in just over a year using this method i have had just two bacterial contams, which may, or may not have been due to not soaking prior to pc'ing.

I've used popcorn and I like it, even if noone else does. I know people used to do something similar for rye, PCing and hydrating at the same time. I think the problem would be the same with simmering instead of soaking. Endospores inside the grains will survive the PC and germinate later on causing contams.

I like to simmer my popcorn for about 30-45 minutes then turn off the heat and let it soak on the stove over night. Next day I simmer again then rinse and strain, load up the jars to PC and done.
