So what plants should we worry about becoming illegal or scarce? There is a good number of beautiful legal plants we can still get ... Now what ones should we start to stockpile?

Salvia, if you're in certain parts of the US. Maybe Ayahuasca, just to be safe, but you should be ok.

Salvia's definitely the on the top of that list, maybe the more popular kinds of LSA seeds as well? If your in Canada then I'd say Amanita mushrooms and Peyote as well, if their available to you in the first place. Honestly if I had the resources I'd of already stockpiled everything that the local headshops sell, alot of that shit's never gonna be seen around here if it's made illegal.

Peyote is continuing to become more scarce, but San Pedro and other mescaline-containing cacti are abundant. If on the slight chance mimosa hostilis was made illegal, there are a number of alternative plant sources containing DMT and/or 5-Meo-DMT from which to extract or combine into ayahuasca. Though it's extremely unlikely, one supposes it's not impossible for dried papaver somniferum poppies to be made illegal in the U.S. -- but that would only precipitate an increase in home poppy gardens. Of any plant, it seems most likely that salvia divinorum will be made illegal across the U.S. since it already is in 6-7 states. Most people who've taken the major hallucinogens wouldn't place salvia at the top of their favorites list, but nevertheless this seems to be the one to stock up on. Those who really enjoy salvia should look into growing it.
The beautiful thing about plant-based psychoactive substances is they are ultimately beyond the reach of the law, because it's impossible to eliminate every seed, or spore, or cutting. Shutting down a major MDMA lab and distributor could knock out the bulk of the E supply to a given area for months or even years -- because manufacturing that substance requires special knowledge, equipment, and supplies. Finding and eradicating an enormous field of marijuana plants will at worst temporarily diminish the local pot supply until anyone and everyone with some seeds, space, and a little determination picks up the slack and does what any 4th-grader is capable of. - Not everything is as easy to grow as pot, but if you're really crazy about a given plant (or fungus)--the best long term way of securing the organism in question is to look into growing it.

Growing Salvia is awesome. It can be tricky to grow depending on your location, but definitely worth trying if you're really into Salvia.
