I remember inventing Zombie Tag, which we were actually forbidden to play. (well countless kids invented that probably but I invented it for our school)
Basically Zombie Tag is that once you're tagged you're It, but once you're It you stay It. So what you'd get is an increasing horde of hunters and a rapidly diminishing group of hunted.
It starts off as Tag and ends as Lord Of The Flies basically hehehe.
It was much more exciting than regular Tag because it got outta hand fast. Then one of the last survivors one time got so scared he ran crying to the teacher who already frowned on the game and thats when we were forbidden to play Zombie Tag. How lame.

Zombie Tag was more democratic in that respect. The fastest ended up hunted down by a whole gang of taggers.

That sounds like a game called 'british bulldog', where you'd have one person in the middle of the playground and then everyone else at one edge. Then we'd all run to the other edge of the playground (where you are safe) and whoever got touched by the 'bulldog' joined the center with him. Eventually one or 2 people would end up running from the whole class 
When I used to do Judo when I was younger we used to play this game, however we'd be on our knees like actual dogs and in order to be in the center you had to be pinned on your back for 3 seconds 
Another playground game we used to play was '40/40 in', where one person would be it, at the base thing, and then we'd all have 40 seconds to run and hide. After 40 seconds whoever was it would come looking for us, and we had to get back to the base before whoever was it did and shout '40/40 in *yourname*. The first person out was on it for the next round

We used to play a game called Freeze Tag, you could tag anybody and when you did they had to stand still with their arms out until somebody ran under their arms which unfroze them. Actually now that I think about it I don't see how that game ever ended...
We played it in elementary school gym class sometimes and I think the teacher just liked it because she could start a game and just relax until it was time to go back inside.

Gravel tag was the best in elementary school. Our playground was fucking perfect for it. If you were really good you could jump from the main playground area to a little isolated place. I don't know how I managed to get there when I was a kid, I can't even do it now, but if you could you were pretty much golden unless someone nasty somehow ended up being it.

I didn't usually play a lot of the common playground games that other kids my age played. I'd occasionally play tag or hide and go seek, but I preferred reading comic books and playing make-believe games. It was the beginning of a long life of social isolation.

we played more manhunt then tag when i was a kid. None of our neighbors really cared about groups of 20-30 kids running around in all black clothing hiding in their bushes. It was a lot of fun, we had games that would go all night.

That sounds more like my "jailbreak" games. Thinking back, I can imagine scenes that would have had cops called on us nowadays... My favorite trick was to crouch down low next to a bunch of trashbags, and you'd blend right in...

Sure, we played a little of the generic tag game, but we played mostly 4-square, 6-square during recess and 'hula hoop wars' during physical education class. I dominated it all by the way. I was top fucking dog.

4 square was the shit at this day camp I used to go to in the summer. No one else I knew outside of that ever played it though. Man that shit was fun, but now that I look back on it I don't see how.
